Owing to creation of Thai rice snack with health benefits for higher potential in commercial scale, mulberry leaf was applied in the production of extruded snack product. Mulberry leaf in dried powder was mixed with rice, corn, soy, sugar, oil, vitamins and minerals to investigate the operating conditions with twin-screw extruder at varying mulberry content (5, 7.5 and 10%), screw speed (300 and 350 rpm) and feed moisture (13, 15 and 17%) in the 3 × 2 × 3 factorial experiment. Rice contains several kinds of bio-functional components. In this study, γ-aminobutyric acid (GABA) and tocopherol, or Vitamin E were identified and their relationships to antioxidant activity using DPPH assay of both brown and pre germinated Thai rice were studied. GABA, one of the two inhibitory neurotransmitters that make the neuron resistant to stimulation by excitatory neurotransmitters and inhibitor of some cancer cells activity. Tocopherols, or Vitamin E, are natural antioxidants which help improve blood cholesterol. The objective of this study was to determine proanthocyanidins and anthocyanins content and their antioxidant activity from four pigmented rice: Black glutinous, Homnin, Man-Pu, Sangyod by extract with 6 different solvents: DI water, 1%HCl-DI water, Ethanol, 1%HCl-Ethanol, Acetone, 1%HCl-Acetone. The results showed that the proanthocyanidin and anthocyanin contents were different between rice phenotypes and polarity of solvents (p<0.05). The total proanthocyanidin contents followed the order: Man-Pu, Sangyod, Homnin, Black glutinous.
